With most of these countries you will need a ATA which you know to well you have to leave a large deposit.
All the people I have meet in Thailand who has travelled from parts off the EU did travelled by way off China (Tibet ).
So I would consider the best way out off Thailand would be the same way in.
IMO I still think you are best to start from with in China and all you have to do is find the best bike to complete the trip on.
If it was not for your desire to travel off road then the CFMoto TR-G have proven to be a great bike.
But you need to rethink your route.
It is only an idea, nothing more. Will see how it develops.
Unfortunately I do have a strong desire to go off roading so the TR is too big for me. Who knows, maybe the MT will prove itself by the time im ready for the trip ;)
