That bike does not have your engine in it.

Some may have manuals, most do not. My best guess would be that you have an electrical short, a loose connection that every once in a while loses contact? If is dies abruptly and then starts right up that would be my best guess. The bikes engine is a version of the Honda CG125, there really is not that much to them. Haynes does make a manual for the CG125. It would be helpful for diagnosing. You can also find some basic parts like a CDI and coil etc. for the engine it’s a 167FMM CG version. If you feel you have to have a factory specific manual, then you are painting yourself into a corner, searching for the needle in the haystack. Does it have a kick stand kill switch start with that, a short in that would act the way you described.

Owner's manuals are used by people who care about their bike who takes time to read about their bike and how to fix it, but when you go to have tyre fitted or repaired in China and the "so called mechanics" inflates the tyre without a gauge to 80 lb pressure and tells you all is ok? how would workshop manuals come into play?
TIC (This is China) The logic free zone ?

So the Chinese owners and mechanics can just look at or touch a motorcycle and know how to fix it by magic powers?

    Some may have manuals,

Never seen one and most can't read

The technology in these bikes are from the 60s-80s.Most anyone with some mechanical knowledge can keep them running.MJH is right, that book doesn't apply to these bikes.

If you ask for a shop manual you will get ignored or get a run around response.

Very few shop manuals, very generic specs and use specs common to something like a Japanese bike - Works fine etc.
I set most bikes tappets basically the same with good results, only ever been told tappet clearances by QingQi facrtory, Zhongshen RX3 I used the middle ranges I found on line, the CG and CB engines 0.06mm intake and 0.07mm exhaust and every time I set bike there is a power regain from before. Chinese bikes are a junker thing mostly and any common Western mechanic could logiclly work out what is OK etc.
Shineray Recommends 20W50 Diesel truck oil in their bikes - work that out!
