I am using a Qstarz BT1000X Tracker and the software which comes with it to download the tracks from the device to the PC. Then I open these with Touratech QV (TTQV) to clean, reduce and file the tracks.
I scanned a bunch of China maps and calibrated them with TTQV.
For the altitude / speed graphs I use GPS Track Analyse.net (in German). TTQV also provides a x-y chart function but not as nice (the new version coming later this year should have an improved version).
To create gpx files TTQV is also fy first choice. I open gpx with GE and create the kml(z) files there.
GPicSync is my preferred geo-tagging software because it not only writes coordinates but also geonames into the pic's Exif headers.
There are loads of freeware available on the web, so this combination is my personal choice only. I hope TTQV's new version will be able to handle all the above. It's $ ware but worth it for me
P.S. Have you thought about enabling I-frames on this boardAndy

I hadn't read this report in ages, was cool to read it again! Damn, now i want to go ride up north. (although not really NOW, more like in 6 months!)

That looks like a lot of fun! Looking at your maps from that day, am i correct in guessing that this is that road?
