You're right. Meko import the Pioneer version of the 125 that they call X-Trem 125. Curiously the Pioneer versions have rear disc brake and the main factory's (Qingqi) a drum brake.

It could be done. I did search ebay for a used example as the original is hard to get and expensive, but in the end I just settled for looking around to find a low pressure-large diameter spring...

That looks the same as the one I got from Xian Racing for my Qingqy QM200GY. It looks as if it'll come with some bits that are surplus to requirements: The downpipe and those funny-looking struts....

Are the two parts meant to come apart?. I mean the downpipe and the silencer. If so, it's strange that no clamp is fitted. A clamp won't help unless you cut a couple of slots in the silencer entry...

Nothing. I do have a Honda CG125 haynes manual scanned. This is generally available all over the web. Apart from general layout it doesn't really help for Chinese engines.
